ABSTRACT





The prevalence, etiology, chemotherapy and control of Deg Nala disease were studied. The disease occurs in winter months when fungal infested rice straw is fed to cattle and buffaloes. Buffaloes are more frequently affected than cattle and younger animals appear to be more susceptible. The possibility of mycotoxin in causation of the disease is discussed. The most frequently found fungi species recorded from rice straw were: Aspergillus, Aspergillus flavus and Penicillium notatum. Therapeutic trials with various drugs were carried out, but 2% of Antidegnala liquor orally, or5% of Antidegnala liquor S/C or I/M giving the highest cure rate.

Introduction





Raising buffaloes and cattle in Pakistan, Nepal and India is one way of augmenting the financial resources of village people.These animals are mainly raised on rice and wheat straw which are of poor nutritional quality .Rice and wheat plant when infested by fungus Fusarium causes severe health problem many researcher in this regard has documented. Infections that may be debilitating in nature can cause significant economic losses as a result ofDecreased production confounded by reduced growth rate, mortality and poor animal performance. An effort to improve animal production in the village calls for suitable control or therapeutic measures of any disease. Experimental evaluation of the immunologic properties and treatment of F. graminearum infections should be considered. The genus Fusarium contains important producing species that have been implicated in several animal.diseases including Degnala disease hemorrhagic,estrogenic, emetic feed refusal syndromes ,fescue foot moldy sweet potato toxicosis,been hulls poisoning,and Equine leukoencephalomalacia.Many of these mycotoxin producing species have been also implicated in several human disease such as alimentary toxic aleukia,urov or Kashin-Beck disease,Akakabi-byo or scabby grain intoxication and esophageal cancer.(www.mold-help.org) Deg Nala disease, which causes necrosis and gangrene of the dependent parts in cattle and buffaloes (Bubalus bubalis L.) is known to exist in Indo-Pakistan, as a number of cases were recorded stemming from a monsoon rainwater stream in the area of Murdike (Sheikhpura District), near Nala Deg in Pakistan (SHIRLAW, 1939). A widespread occurrence of the disease has been reported from rice growing areas of Indo-Pakistan (IRFAN, 1971; KALRA et al., 1972; IRFAN and MAQBOOL, 1986) which caused considerable economic losses. Karki reported same disease from area of banke district since year 1990.





Materials and methods





Prevalence. The outbreaks of Deg Nala disease occurring during 1998 through 1999 were recorded in 5 villages of Bankatwa,Mahadev puri,Bethani,KhajuraKhurda Manokapur Village development commiti of Banke district of Midwestern Nepal . The observation period was from November to February.





Isolation of fungi. Samples of infested rice straw, containing multiple dark specks, were collected from areas where natural outbreaks of Deg Nala disase had been recorded. Isolation of fungi on potato dextrose agar, yeast soluble starch agar.





Therapeutic trials. A total of 80 randomly selected naturally clinically affected animals were further divided in to 4 groups of 20 animals each. The following therapeutic regimens were tried.





Treatment A. 5% Antidegnala liquor 5-10 ml S/C or I/M 4 times in a week on alternate day.





Treatment B. Daily oral administration of 2 % Antidegnala liquor 2ml for 10 days.





Treatment C. A single intramuscular injection of terramycin-LA (Pfizer; 200 mg oxytetracycline/ml) 20 mg/kg b.w. local treatment of lesions proceeded as in treatment A.





Results





Prevalence.





During a one year study period a total of 640 cases were recorded in 5 villages of the district. Of these 470 were buffaloes and 170 were cattle . Of the buffaloes which showed lesions, 150 were young, 320 adult; 65 were males and 405 were females. 170 Sahiwal cattle which showed lesions, 139 were young, 31 adult; 134 were males and 36 were females. The disease was prevalent from November to February. The lesions developed only in cattle and buffaloes fed continuously on rice straw containing multiple dark specks.





Fungi isolated from infested rice straw. Species of fungi were isolated from the samples of rice straw, the most frequently recorded were: Aspergillus niger, Mucor hiemalis, Aspergillus flavus and Penicillium notatum.





Signs and lesions. Severe cases lingered for 1 to 2 months, but in others the wounds healed within a few weeks. The diseased animals were invariably weak. Ulcerative wounds and gangrene developed on the limbs and other dependent parts of the body. Almost all cases showed gangrene of the tail, which was shrivelled and cold to the touch. Invariably, one or both ears showed signs of dry gangrene. In some cases the muzzle and even the tip of the tongue became gangrenous and was shed. One or more hooves showed lesions in varying stages of development. In some cases the affected feet and legs were swollen up to the knee; hair was denuded and inflammatory changes set in. Later, wounds appeared on the coronet, fetlock, pastern, knee and in the hock region. In very advanced cases the lower regions of the feet become gangrenous. In some cases the hooves were shed and bones were exposed. The gangrenous portions of the tail, tips of the ears, tongue and other affected parts of the body, dropped off, although wounds healed in the course of time.





Therapeutic trials. The highest cure rate (90%) was observed with treatment A, followed by treatment B (70%). Treatments C had an identical cure rate of 30%.





Discussion





The disease is strongly associated with the feeding of rice straw containing multiple dark specks. This observation is concurs with the findings of earlier researchers (IRFAN and MAQBOOL, 1986) who reported that fungal infested straw and fungal mats of various species in different combinations, when mixed with fresh non-infested rice straw, produced the disease. Saprophytic fungi infesting rice straw produce mycotoxins possessing vasoconstriction, which produces the lesions of the disease (IRFAN et al., 1984). The greater severity of the disease in buffaloes as compared to that in cows may partly be due to the high susceptibility of this species. Therapeutic trials with an antidote Antidegnala Liquor given orally, and parentally gave highest percentage (90%) cure rate. This cure rate was in a broad agreement with the findings of SCHOENTAL (1980) who reported a cure rate of 80% with a penta-sulphate mixture. Secondary bacterial infections of the lesions were at least partially responsible for the severity of the disease. To address this complicating factor, long-acting Terramycin was injected parenterally. Moreover simultaneous use of antifungal(Diethylamine acetarsol,Acetylarson,Antidegnala liquior) induced development of immunity and was proven to be effective against infection.Taking the result of this study it is recommended that effort should be directed toward the prevention of F.graminearum infection in animals. Moreover further study should be conducted to confirm the involvement of this fungus in other animal and poultry diseases.Finaly the application of Diethylamine Acetarsol or its depravities(anti-degnala liquior) other immunomodulator for treatment of F.graminearum infection in domestic animals should be looked into.

Last but not least, it is now possible to pick up a decent rice cooker for around which is cheaper than the cost of a good pan! Therefore there really has never been a better time to join the 21st century, at least when it comes to the approach you take toward cooking your rice that is!

Rice in All Its Yumminess - Part 5

Baghali Sheveed Polow - rice with Lima beans and dill

(serves 3-4)

Rice

Baghali means Lima beans in Persian and sheveed means dill leaves. I usually add chicken or chopped lamb pieces to this delicious dish.

Ingredients:

1. 4 cups of white long grain rice.

2. 200 grams of butter.

3. Fresh Lima beans each cut into half (remove the skin first)

4. 2 onions - chopped finely.

5. 500 grams of de-boned chicken pieces or 500 grams of cubed lamb pieces.

6. Salt and pepper as per taste.

7. Turmeric - half a tsp

8. 3 cups freshly chopped dill (dried dill with work well too).

Directions:

I usually soak the rice for at least half an hour (if it's new rice) or for 1 hour (if it's old rice) in warm water and some salt before cooking.

Take a medium sized pot and fry the chopped onions in about 4 tablespoons of butter until it turns a lovely golden brown. Add the dill leaves and stir fry for a few minutes. The aroma of the dill leaves fill the kitchen and believe me, it makes the mouth water.

Add the chicken/lamb along with turmeric, salt and pepper and stir fry until the meat changes its color. Add the halved Lima beans. Boil till the meat or chicken is tender. Be careful with the chicken because it can easily over cook and break into small pieces. You could add the chicken a little later which I recommend. Check to see if the Lima beans are cooked.

Add the rice to this boiling mixture and make sure that the level of water above the rice is just about a couple of centimeters. Mix the rice well with this and put it on high heat and keep stirring occasionally so that the rice does not clump together or stick to the bottom. Change to medium heat midway and When most of the water has evaporated, put it on low heat. Let's first look at how the two appliances are similar. Most rice cookers and slow cookers have a removable liner and an insulated outer shell. The outer shell contains the heating device and controls. They are usually electronic devices. Both can be used to prepare entire meals.

Slow cookers are sometimes also referred to as crock pots. This comes from the removable liners usually being made of some type of crockery material with an enamel finish looking like the original crock pots they used to bury in pits with coals to slowly cook the meat. Liners can also be made of enameled steel or non-stick steel. The shell contains the heating coils that surround the liner in a double insulated container. The liner distributes the heat evenly and consistently to cook the food. They also come with various temperature settings.

Benefits of rice cookers over slow cookers

Rice cookers cook quickly so no preplanned meals is required. Lots of recipes allow individuals to prepare healthy home-cooked meals in roughly 30 minutes. The steaming baskets that come with some models of the rice cookers allow multiple food items to be cooked at the same time saving both time and energy. Additionally, the steaming process allows more nutrients to be kept in the food. Slow cookers require preplanning and preparation at the beginning of already busy days. They can only prepare one item of a meal because of the single basin. At Chinese meal times, Chinese people use a round or square table. - Don't let your chopsticks be covered with food juice or residue 
- Don't use chopsticks to beat any utensils to make any noise 
- Don't wave your chopsticks 
- Don't use chopsticks like forks 
- Don't use chopsticks as toothpicks 
- Don't lick or suck your chopsticks 
- Don't put chopsticks vertically in rice in a bowl since it resembles the incense sticks for the dead 
- Particularly after SARS, it is more common these days that people use a pair of common chopsticks for fetching the food on the plates. Don't forget to swap your own chopsticks with the ones provided when getting the food because of hygiene reasons. In a Chinese meal, an even number of dishes should be ordered. Two developments have changed that in recent decades. The good news for birds is this myth is completely untrue -- birds actually eat grains of rice in the wild to supplement their diets, with no ill effects. There is also an issue with the shape of rice grains, which are usually round, as they can roll underneath shoe heels and create a slipping hazard, making rice an insurance liability that many churches are unwilling to accept.

Chicken and Rice - Easy, Healthy, AND Gourmet?

I know what you're thinking! Sure, chicken is easy and yes, it can be healthy, but can it really be gourmet? Absolutely! It's all in the presentation. Grab a pen and paper; here's how you do it.

Preferably, it's a heck of a lot easier to use an electric frying pan. This way you can make your sauce. Add about 2 Tbls. of extra light virgin olive oil into your pan. Take two nice size garlic cloves, peel them, smack them with a knife, chop them up and put them in your pan. Slice up some red onion (about 3 inches long and a half inch thick). Quarter a handful of mushrooms and sauté them on low along with the onion and garlic. This is a great meal with a yummy Pinot Grigio so I'll pour myself a glass and use about a quarter cup of it to throw into the sauté. Let that reduce a little and stir it around a few times. Next, add about 2 or 3 Tbls. of Balsamic Vinegar (I like Colavita because it's a little sweeter), stir and cover. Onto the next station!

Rice

Now, rinse off the boneless, skinless chicken breasts, removing all of the fat. I used 3 7 oz. breasts. Turn up the pan to about 300 and sear the breasts tenderloin side down first. After about a minute and a half, turn the chicken over and repeat the sear. Turn down the pan to about 200 and add two cups of water. Once the liquid begins to boil again, add a teaspoon and a ½ of low sodium, plain chicken broth paste. Stir it around so it dissolves properly. Add about a quarter size amount of Thyme on top of the chicken along with some fresh ground pepper. Startin' to sound good yet? Now, you just let it go! Onto the next station!

You can do this with really any kind of rice. My personal favorite is jasmine white (because it's not as mushy) but you could do whatever you like. Also, you could even dress up your rice a little by using some slices almonds or cashews. Cook your rice about a half hour before you would like to eat but make sure that it's not too mushy. This way, you're not pressured. Anyway, the longer the chicken is in the sauce, the yummier it will be! You just want to make sure that you stir it and turn them every 10 minutes or so and keep the temp down to 200. Make sure that you keep about 2 cups of liquid in the pan at all times.

Ready to eat? Okay, remove the chicken and cut it into slices or chunks (whatever suites you best). Take a 1 ½ tsp and mix it with a small amount of cold water (maybe a ¼ cup of water). Pour the mixture into the sauce and stir. Once it gets a little thicker, add another teaspoon to a ¼ cup of water and do it again. Add the chicken to the sauce and stir it up. Let the sauce cook for about 10 minutes... stir it often. You want the sauce to be thick enough to coat the chicken nicely. Onto the next station!

Here's where the presentation comes in. Now I'm one of those people who would use his or her "nice stuff" any time I could. So, my philosophy is, if you've got it, use it! While you're messing around in the kitchen, finely julienne some pretty peppers. Red, orange and yellow are my favorite because they add some really nice color to the dish. Sauté them just enough to be limp and you can either clump a little bit onto the plate or spread it out a little. You don't want it over powering that's all. Ladle about a cup and a ½ of rice onto the plate. Now make a small pocket into the top of the rice. Ladle a nice amount of sauce into the top of the pocket. Add your chicken to the top and garnish your plate with your peppers and the final touch which is a nice piece of herb. I like to use rosemary sprigs because they're so pretty. But you could use virtually anything I suppose.

Viola! You have now created Chicken and Rice dish that is EASY, HEALTHY and GOURMET!

Once the rice turns a little brown add in the chicken broth and salsa, finally before you finish reduce the heat from the skillet and cover it for almost 20 minutes, the mix will loose all liquid since it will be absorbed by the rice and once there is almost none liquid in it, you can say it is ready to go. You can remove from the fire once it has the consistence you like.

Spanish Baked Rice Recipe

A delicious way to improve the already delicious rice is to mix it with onion, green ball pepper, tomatoes and a sweet hot sauce of chili, all of this ingredients taste better when covered and baked with cheddar cheese and are finally garnished with fresh cilantro. You will need:

Rice

Ground beef (1 pound)

Onion (1/2 cup, finely chopped)

Tomatoes (1 can or 14.5 ounce)

Water (1 cup)

Rice grain (3/4 cup)

Chili sauce (1/2 cup)

Salt (1 teaspoon)

Brown sugar (1 teaspoon)

Ground cumin (1/2 teaspoon)

Worcestershire sauce (1/2 teaspoon)

Cheddar cheese (1/2 cup, shredded)

Fresh Cilantro (2 tablespoons)

How to do it:

First step is to preheat the oven to 375ºF or 190ºC degrees. While you leave the oven heat take a large skillet and put it over medium heat in here you'll have to put the brown ground beef, the beef will loose some fat, take the excess of it and transfer it to a large pot. Put this pot over heat at medium to low temperature. Add to this mix the onion, green ball pepper, tomatoes, water, rice, chili, salt, brown sugar, Worcestershire sauce and the black ground pepper. You will have to leave this mix simmer for about 30 minutes, but do not forget to stir it occasionally only to avoid burning. Once you have this done, take it to a casserole of 2-quart dish, pour it all and press it down, finally sprinkle with the cheese and bake it during 10 to 15 minutes or until the cheese has obtained a golden color, is melt and bubbly. To decorate add the chopped fresh cilantro. Now you are ready to serve it.
