Yu Bu Cho Bap is a Korean form of rolls. The inside of the roll is rice mixed with seeds and other flakes for flavor. The outside of the yu bu cho bap is fried tofu. This dish is very popular in Korea because of its ease in preparation as well as in its ease of transportation. This is how you make Yu Bu Cho Bap.

Here is the list of ingredients. You are going to need simply rice and a package of yu bu cho bap wrapper. The package of yu bu cho bap can be found in all korean markets.

Rice

The next thing you need to do is to prepare the rice. Just prepare it like you have always done because there is no specific way that you have to do rice, unlike sushi.

Once the rice is done cooking, spoon it into a large bowl and let it sit and cool down for a while so that it's easier to handle the rice.

Once the rice has cooled down, open your package of yu bu cho bap wrapper. Although this is not usually done, I usually add the liquid that is in the package so that the rice is a bit sweeter and has more flavor. Inside the package should be a pack of flakes (sorry, but I'm not sure what these flakes are). Add those flakes to the rice and mix it well.

Once you have done that, get the rice and make medium size balls (or smaller, depending on the size of the package). Then open the yu bu cho bap wrapper, and add the rice ball in. Push the rice down once it's in so that it doesn't overflow.

A simple little grain with the common name of rice provides almost one fifth of the total global intake of calories. Preparing rice is a fairly simply process which helps it popularity.

Chinese Fried Rice Recipe:

Rice

What will you need:

1 16-oz. package of mixed frozen vegetables or a package of frozen peas and carrots
1 cup of frozen onions and peppers stir-fry vegetables
1 8.8oz package of brown rice cooked
4 tsp of olive oil or canola oil divided
2 - 3 eggs
4 tbsp stir-fry sauce. Store bought is fine, preferably one with low sodium
Lime wedges
Crushed red peppers (if desired)

Method:

Heat 2 tbsp of olive or canola oil in a wok or a large non-stick skillet on medium heat. Whisk the eggs and add to the oil. Make the scramble eggs by stirring occasionally until set. Remove from the pan and set aside. Increase the heat to medium high and add the remaining 2 tbsp of the oil to the pan. Stir fry all the frozen vegetables and cook for about five minutes or until tender. Remember to never over cook the vegetables in order to prevent nutrient loss.

Add the stir fry sauce and if you wish the crushed peppers also. Add the cooked brown rice and the scrambles eggs. Heat through. Lastly squeeze the lime juice to give this Chinese fried rice recipe an extra flavor. This recipe is good if you have left over rice and chicken. Or you can add tofu and omit the eggs and make this a vegetarian Chinese fried rice recipe. You can add pre-cooked shrimps to this and make it a seafood Chinese fried rice recipe. Note: Brown rice was used but white rice will work just fine.

Red yeast rice is a form of rice fermented using red yeast. The Chinese have used this rice for
years as a spice, food preservative and colorant, as well as a dietary supplement. For more than
1,000 years, these people have also used red yeast rice medicinally claiming it improved blood
circulation, and relieved indigestion and diarrhea.

Active Ingredients

More recently, scientists have found that one of the active ingredients naturally produced when
rice is fermented by red yeast is Monacolin K, or Lovastatin. For those of you not familiar,
Lovastatin is the generic equivalent of one of the statin drugs; a class of the strongest, most
effective cholesterol lowering prescription medications. Unlike prescription Lovastatin which
contains 10 mg or more of this active ingredient, red yeast rice contains less than 2.5 mg of the
cholesterol lowering medication per 600 mg capsule. Red yeast rice has been marketed as a
dietary supplement under the names Cholestin and HypoCol.

Until 1999, red yeast rice was readily available as a dietary supplement. However, it was in that
year that clinical studies confirmed the effectiveness of red yeast rice with Lovastatin as one of
its ingredients in lowering cholesterol. When the Food and Drug Administration caught wind
there was a dietary supplement being sold that included a prescription medicine, they decided to
pull the supplement from the market. They defended their decision by claiming that since the
supplement contained a drug that normally required a doctor's prescription; the red yeast rice
could not be sold over-the-counter in an unregulated form.

The Big Stick of the FDA

The FDA's decision met with some controversy and was actually overturned later that year by the
court of the District of Utah. In 2000, however, the FDA triumphed when the 10th U.S. Circuit
Court of Appeals ruled that since red yeast rice does contain the prescription medicine
Lovastatin, even though it does occur naturally, it is subject to FDA rules.

After that time, most forms of red yeast rice disappeared from the shelves of pharmacies and
health food stores, in its original form anyway. You can still buy the supplement but because of
the FDA order red yeast rice is made using a different fermentation process which does not
produce Lovastatin.

So, that is the story of red yeast rice. Used by the Chinese for hundreds of years as a way to
increase blood circulation, federal government regulations forced vendors to clear this natural
supplement from their shelves. You can still buy red yeast rice, but don't expect it to have any
big effect on your blood pressure. To have the benefits of the cholesterol lowering ingredient of
red yeast rice, you must get a doctor's prescription.

Recent research published in the Annals of Internal Medicine concludes that red yeast rice has significant cholesterol-lowering effects.

Based on recent research, 62 people who were unable to continue treatment with prescription cholesterol lowering drugs due to adverse side effects, took RYR supplements and made lifestyle adjustments for six months. After three months, the LDL (so-called "bad" cholesterol) levels of those taking the active supplements had declined 27%, compared to 6% in the placebo group.

Red Yeast Rice Side Effects - Is It Safe?

In 2007, several brands of popular RYR supplements were pulled from the market by the FDA. The official reason given was safety concerns because of the use of standardized extracts which FDA tests found contained high levels of lovastatin, the active ingredient in Mevacor, a prescription drug approved for marketing in the United States as a treatment for high cholesterol.

Although safety reasons were the official explanation for pulling the RYR products, there has been legal dispute as to whether RYR is a drug or a dietary supplement, involving the supplement manufacturers, the FDA and the pharmaceutical industry, particularly producers of so-called "statin drugs."

Apparently, the safety concern is based on the known risks and side effects of prescription cholesterol lowering statin drugs which rely on lovastatin as the main active ingredient. The safety concern was for only certain red yeast rice supplements containing high levels of the standardized extract lovastatin. This is why manufacturers of holistic herbal remedies don't use or approve of the standardization process.

The standardization process involves the isolation and concentration of a single ingredient (lovastatin for example). This is done with harsh chemicals, traces of which can't be fully removed from the final product. It's a well known principle in traditional herbalism that isolation and concentration enhances the potency of a single ingredient while also increasing the risk of side effects.

Another recent example of the dangers of using this manufacturing process includes the development of liver toxicity from using Kava Kava standardized extract, an herb which has been safely used for hundreds of years.

Red yeast rice in its natural state consists of 14 monacolin compounds such as monacolin K, a natural lovastatin. From a holistic point-of-view these other monacolins, along with its naturally occurring fatty acids, anti-oxidants and other nutrients, work together to enhance its cholesterol-balancing and other health enhancing benefits without producing negative side effects.

The mainstream medical community is slow to accept red yeast rice as an alternative to statin drugs, even though there is no solid evidence that RYR is unsafe. The quality of nutritional supplements on the market does vary and it's the responsibility of the supplement user to locate high quality products manufactured by companies that follow agreed upon good manufacturing practices (GMP).

First, you need to wash the rice thoroughly under cold running water, then soak in cold water for about 30 minutes. And place the rice in a pan with 4 cups of water, bring the rice to the boil, wait the liquid almost absorbed, cover and simmer in very gently heat for 10 minutes.

After 10 minutes, turn off the heat, remove the lid to let the steam out and set the rice aside. Heat 2 tablespoons oil in a wok, pour the eggs into the wok, stir gently until the eggs is set, transfer it to a bowl and set aside.

Add 1 tablespoon oil back to the wok, then add the spring onions (green onions) and minced garlic to fry for a few second if using. Add the rice, cooked eggs into the wok, and pour 2-3 tablespoons dark soy sauce over the rice, mix well and heat through over a medium heat. Season with some black pepper and serve hot.

Haveej Polow - rice with grated carrot and minced beef/lamb

(serves 3-4)

Rice

Haveej means carrot in persian. Carrot is used extensively in Iran. It is used in salads, in rice dishes, in soups, in jams etc. It is served as an accompaniment with other main dishes (a sour pickle with vinegar - torshi or soaked in a salt solution with other vegetables - shur)

Ingredients:

1. 4 cups of white long grain rice.
2. 8 table spoons of cooking oil.
3. 1/2 tsp of turmeric and pepper each.
4. 6 large carrots peeled and roughly grated.
5. Half a kg of minced lamb or beef.
6. 1 onion - chopped finely.
7. Salt as per taste.
8. 120 ml of water.
9. 2 cups of tomato sauce.

Directions:

I usually soak the rice for at least half an hour (if it's new rice) or for 1 hour (if it's old rice) in warm water and some salt before cooking.

Take a pot and half fill with water. Add a bit of oil and bring to a boil and add the rice to it. Check to see if the rice has cooked half way by taking a few grains in your mouth and biting into it. Take out the rice and drain it.

Fry the chopped onion in about 4 tablespoons of oil until it turns a lovely golden brown. Add the meat along with turmeric, salt and pepper and stir fry until the meat changes its color to a lovely brown.

Add the tomato sauce and stir fry for a few minutes. Add the grated carrots and stir fry yet again for a few more minutes. When the mixture starts to thicken, it is ready.

Take the rest of the cooking oil in another pot and add 120 ml of water to this. Spread alternate layers of rice and the meat mixture to this till it is all used up in this manner. Sprinkle a little more water on top and cover the pot. Put it on high heat and let it cook for a few more minutes. Switch to medium heat when the rice starts steaming and cook for about 15 more minutes.

Finally put it on low heat, sprinkle some oil on top and cover. After about 10 minutes, your Haveej Polow is ready.This dish has a sweetness to it and if you have a bit of the sweet tooth in you, you will love this.

Tip:

Serve with fresh green salad and yoghurt.

How to Make a Rice Pilaf

Rice pilaf might sound like an exotic dish but it is so easy to make. The word pilaf comes from the Turkish word "pilav" and this dish is known around the world, although different countries prefer different flavorings. This dish is always started by browning rice in oil or butter. Stock is then added, as well as other ingredients. A pilaf might contain meat, seafood, poultry, vegetables, herbs, or spices and it can be served as an entree or side dish.

When making a pilaf, it is best to use homemade stock for a superior result. If you do not have any, you can use water or low-sodium broth. Converted rice is good to use for this dish and this is rice, which is boiled briefly with the husks on. This sends some of the husk nutrients into the actual rice, giving it a light brown color. Medium grain or long grain rice is also good. Try basmati rice if you like but it is best to avoid starch-coated Asian rice because its stickiness means it does not work so well for pilaf.

Try experimenting with different stocks or adding aromatic ingredients like thyme, parsley, bay leaf or oregano. Add the contents of one of the little seasoning packets you get with noodles for a salty, spicy flavor. To make your pilaf creamy, you can substitute half a cup of the water for cream of chicken, celery, or mushroom soup.

Basic Pilaf Instructions

Melt three tablespoons of butter in a big pot over a medium high heat, then add a cup of rice and saute it for a minute or two. Add two and a half cups of chicken broth or water, two cups of chopped vegetables and some seasonings.

Turn the heat down and simmer the pilaf, in a tightly covered pot, for fifteen minutes. Turn off the heat and let the pot sit for ten minutes. Do not lift the lid. The rice stays hot for half an hour so you can make the rest of the dinner in the meantime.

Many cultures have their own versions of this tasty dish. Middle Eastern and Arabic rice pilaf features dried fruits, almonds, and pine nuts. You can use basmati or long grain rice to make this and serve it with chicken or lamb kabobs. Historians think that pilaf is traditionally an Arabic dish.

Mexican pilaf includes celery, peas, and carrots and the rice is topped with hot sauce and cilantro. For Indian pilaf, you can use basmati rice, which is a long-grained rice. Add onions and carrots and also some bay leaves, cumin seeds, whole cloves, and peppercorns to give the dish a delicate fragrance. Be careful when handling cooked basmati. Its length means it can break if you are rough with it.

A classic recipe for pilaf features onions, celery, nuts and peas and to make this you should brown the celery, onions and nuts in butter, then add the rice. Nigerian Jollof Rice

Different African countries have their way of cooking jollof rice. For those who are allergic to sea foods, since theses are optional you can always replace them with others you feel comfortable with. One may choose to have a mixture of fish, beef, mutton and chicken or one may decide to just use one of the four.

Ingredients:

Rice

5 cups of rice
½ kilo of shrimp, crayfish, periwinkle (optional)
2 kilograms of fish, beef, mutton or chicken, pork
I medium sized onion
3 red and green pepper
tomatoes
Green peas
Red pepper, onion and tomatoes (blended)
Corn beef
Salt
Vegetable oil
Seasoning (knhello
korr, black pepper, curry, thyme and white pepper)
Water

Method:

The shrimp should be peeled, if you intend to use a bit of fish, beef, pork, mutton and chicken, then they should all be rinsed and boiled together with the exception of the fish. Add some salt, onion and seasoning and allow it to boil for 30 minutes then set aside. Dice onion, tomatoes, red and green pepper then set aside. Pour some water into a pot, bring to boil and pour the rice into it to per boil the rice, allow the rice to boil for 10 minutes then pour the rice into a sieve and rinse the rice in cold water. (this is done to prevent the rice from sticking together when cooked). Pour some water into the pot, add some portion of the blended red pepper, tomatoes and onion to the water in the pot, add some salt as well as seasoning into the pot and a spoon of vegetable oil. Pour in the diced onion, red and green pepper and bring to boil. Pour the half cooked rice, green peas and corn beef into the pot and allow it to cook for 20 minutes. The jollof rice is ready, but some people prefer to add some sauce to their jollof rice. The sauce can be prepared by pouring vegetable oil into a frying pan, when it is hot what is left of the blended red pepper, tomatoes and onion is poured into the frying pan, add some salt to taste as well as some seasoning, add fish, beef, pork, mutton and chicken then stir and allow to fry for 7 minutes then set aside.

This serves 5 people.

When you're cooking brown rice, does it come out mushy or lumpy? When you follow the brown-rice instructions, do you get inconsistent results? Despite what everyone on the internet says, there is more than one way to achieve firm but fluffy results when cooking brown rice.

All the brown-rice instructions on the internet will say their method is the best. Ultimately, it's up to your own tastes and desires how you like your grains cooked. A perfect method for one person may be unacceptable to another. Understanding HOW the rice cooks will lead you to the results that fit your tastes.

Brown rice differs from white rice in that it's less refined. The outer skin or "bran" is left on. It's like a scuba suit for the rice, making it harder for water to enter. Thus, you must find a way to crack that outer layer, or unzip the scuba suit.

Cooking brown rice will generally take you in one of two directions. Either bring the liquid AND the rice together to a boil, OR boil the water first and THEN add the rice. What's the difference?

The science of cooking behind rice is "gelatinization of starches". At 150F (65c), starches will begin to absorb liquids and swell. This is how sauces are thickened, and why the water disappears and the rice gets bigger under cooking.

Different rices have different starch contents. Sushi rice is very sticky. Jasmine rice is very fluffy. Once the bran is cracked on brown rice, the starches gelatinize and make them stick together in lumps.

You can avoid lumpy rice by adding acids or fats in the cooking. Whether you choose to boil your liquid separately from the rice, or together, you can inhibit gelatinization and stick-factor.

If you coat the grains in fat, as in making Risotto, they won't be as sticky. Try a simple sauté method with butter before adding hot liquid. Acids like rice wine vinegar are often added to sushi rice to reduce sticking and add flavor.

When you're cooking brown-rice, you have the options and the power. Experiment with different methods and decide which is best for your tastes. Brown rice instructions can't always tell what is unique about your kitchen and cooking style. Your tastes should be reflected when cooking brown rice.

Easy Rice Recipe - Cuban Black Beans and Brown Rice

Cuba is the largest island in the Caribbean but it has been isolated by its neighbour to the North due to its political ideology. Cuban cuisine is a mixture of Spanish and African cultures. There are dishes such as Moros y Cristianos (Moors and Christians; black beans and rice), arroz con pollo (chicken and rice) and picadillo (minced beef and rice) are common. There are also soups made with plantains, chick peas or beans. Cuba also produces a beer (Cerveza), which is an excellent drink.

Cuban cuisine likes to use more citrus flavors and marinades. Many traditional Cuban recipes use a tomato sauce base with oregano and cumin. Many limes are used for extra flavoring. This easy rice recipe will go a long way in explaining the Cuban culture. The black beans are wonderfully healthy and the blending of onions, garlic, green peppers and the chile will make an explosive mix. Cuban Black Beans and Brown Rice

Makes 4 Servings

1 cup brown rice

3 cups low-sodium chicken broth, divided

1 tbsp. olive oil

2 bay leaves, divided

1 can (19 oz.) low-sodium black beans, drained

2 garlic cloves, minced

1/2 cup diced Spanish onion

1/4 cup finely chopped green bell pepper

1 serrano chile, stemmed, seeded and finely chopped

Kosher salt and freshly ground black pepper

1. Place rice in heavy, medium-size saucepan with tight-fitting lid. Add 2 cups broth (or substitute with water), olive oil and 1 bay leaf, place over high heat and bring to boil.

2. Stir once and cover, then reduce heat to low and simmer for 45 minutes. While rice is cooking, drain beans and set aside. Spray medium saucepan with nonstick cooking spray and place over medium heat.

3. Add garlic and onion and sauté until onion begins to soften. Add bell pepper, remaining bay leaf and 1 cup broth. Simmer about 5 minutes, until vegetables are tender.

4. Add drained beans and chile and continue cooking about 10 minutes, until broth reduces and beans are heated through. Season with kosher salt and freshly ground black pepper to taste.

5. Remove from heat and cover to keep warm until brown rice finishes cooking. Remove rice from heat and let stand for 10 minutes. Spoon beans over rice and serve immediately.

Aspiring Achiote Rice

If you're hoping that Achiote is related to Peyote, I'm sorry to say it isn't. Fortunately (or unfortunately for some), this spice is cheap, uniquely flavorful, and free of psychoactive alkaloids. If I rekindled "flower power" flashbacks, I'm sorry. I'll re-direct you to the subject at hand. This Spanish inspired dish uses the uncommon powdery/pasty spice called achiote. It can be used in rice dishes instead of the well known and expensive spice, saffron.

Achiote is a small tree/shrub that grows in the tropical regions of the Americas and Southeast Asia. It was introduced by the Spanish in the 17th century. Besides being a spice it has historically been used as body paint and coloring of certain foods.

Now that you have a background regarding this spice maybe you'll give this recipe a try. This food is low fat, simple to make, and prepared in less than 30 minutes.  Give this Spanish style dish a try, I'm sure you won't be disappointed!

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients

3 tablespoons of olive oil

1 large (1 1/2 cups) Vidalia onion - chopped

1 tablespoon of achiote paste

3 cups of chicken stock

1 1/2 cups of long grain white rice

1 1/2 teaspoons of salt

Preparation

In a medium sized pot over medium-high heat add olive oil and onions. Cook until onion is translucent.

Add achiote paste and chicken stock to the pot. Bring to a boil then simmer for 5 minutes. Add rice and salt, then bring to a boil, cover pot and simmer for 15-25 minutes, or until rice is tender. Remove from heat and let rice sit covered for 5 minutes.

Stir the rice and serve immediately

How To Make Alexander The Great's Rice Pilaf

Rice pilaf is a wonderful dish and has been around for a very long time (although rice itself has been around for we don't know how long). All anyone knows is that it's full of filling carbohydrates, and it's warming to the soul. Make it a rice pilaf and you get the delicious warmth of chicken broth cooked into it. It's versatile and there are many recipes. It's great with chicken....it's great by itself to. Rice has come a very long way. In fact, no one really knows how long, because it was cultivated so long ago.

You may say, how long of a time ago. Well, put it this way, it has been talked about in myths on many continents. Images of rice have been found on pottery during archeological digs. The high belief is that the domestication of rice began in Thailand, Korat, or China. The reason they believe this is because they were all areas with a full range of plants and animals that were located near rivers.

About two million years ago the migration of the fauna happened and with the animals came the rice. They traveled to North China and that is where it ended up. Up there in Northern China were ideal conditions for growing rice. The heartland of rice cultivation was said to be in Southeast Asia though. The reason they believe this is from correspondence between certain groups.

Before rice was grown like it is now, rice was grown in forests under shifting cultivation. It was sort of like how wild rice is cultivated. There was also a different Chinese method of puddling soil and transplanting seeds. The puddling of the soil makes the soil less subject to water loss.

At this point rice began to cover all the continents. In fact, the only continent that does not perform rice cultivation is Antarctica (as you can imagine it is pretty cold there). In the 16th and 17th century rice was actually discouraged by physicians in Southern Europe because of outbreaks of Malaria. They believed that it was spread by bad air of the swampy areas (In Europe Mal=bad, and aria=of air).

When the European settlers came to America in the 1600s they brought rice and planted it in the South, which is modern day North and South Carolina. East Africans brought even more rice with them when they were brought to America as slaves. After the Civil War it was being grown in Louisiana and Mississippi although most Americans preferred bread and noodles.

Rice pilaf itself was first discovered in the history of Alexander the Great from correspondence that described his visits with the Persians. It was also served to him during his capture of Marakanda. He brought it back from Macedonia and then spread it through Eastern Europe. From there it took over the world. The rest is history.

For a traditional, moist, and warming rice pilaf try this delicious recipe:

"Alexander The Great's Rice Pilaf"*

Ingredients: ¼ tsp salt, 2 tbs butter, 2 cups chicken broth, ¼ cup chopped onions, and 1 cup uncooked long-grain rice.

1) In a saucepan melt the butter over medium heat. Cook the onion in butter for about 3 minutes, stirring occasionally.

2) Stir in the rice. Cook for 5 minutes stirring frequently. Stir in the broth and salt.

3) Heat to boiling, reduce to low. Cover and simmer for 16 minutes. Remove from heat. Let stand for 5 minutes.

4) Enjoy your piece of culture with some curry chicken. Yum!

Easy Rice Pudding Recipe

When I first started cooking rice I always seem to be in a hurry. That is a sure sign that it will not be good. Rice cannot be hurried. It takes time to do it right. But there are also a few things that people may not know when it comes to rice. Overall the best tasting rice is wild rice, or brown rice. They have the best taste and texture.

But most people seem to be more familiar with long white rice or converted rice such as 'Uncle Ben's'. If one follows their recipe you will usually end up with a good product. However, more and more people are realizing that commercially altered food loses it food value. Therefore, it is nice to know how to cook raw unaltered foods such as white rice.

The simplest of methods is to place an equal amount of water and rice in a crock pot. Simply turn it on low or medium and let it cook for an hour without lifting the lid. Knowing how hot your crock pot gets is important but one to one and one half hours should be enough. If it is on low it will not hurt if you leave it longer.

If you prefer cooking on a stove you still use equal amounts of water. One method is to boil the water first either in the pot or in a kettle, pour the water into the pot, add equal mount of rice, stir, cook on lowest available heat for about 20-30 minutes. The amount of rice you cook will also vary the length of time.

Tips

It is usually best to wash white rice to get the excess starch off before placing into your cookware. Do not stir or lift rice while cooking because it makes it fall apart. Keep the lid on to trap in steam to help cook thoroughly. Only add margarine or butter after it is done cooking.

Starting Baby on Rice Cereal

There seems to be a lot of debate about the best time to start solids foods. Older schools of thought start giving there babies rice cereal mixed in bottles of formula or breast milk as early as 4 weeks old, while newer schools of thought believe that babies should start solids by 4 months of age.

If babies are introduced to solid foods earlier than 4 months old, not only will the baby's digestive system may not be able to handle it, but there is also a danger of an allergy and even obesity as the child gets older. It is safe to introduce rice cereal at 4 months old. Your baby should be eating more solids by the time he or she is 6 months old because breast milk or formula is inadequate for their needs.

Baby's First Serving of Rice Cereal

1. Your baby's first serving of rice cereal will probably only be about 1 tablespoon at first. Remember that eating food from a spoon is a new experience for your baby.

2. Make the cereal according to the packaged directions for 1 tablespoon of cereal. The consistency should be like yogurt and maybe a little thinner for some babies.

3. Offer more rice cereal each day until your baby is used to eating it from a spoon. Increase the cereal gradually over a few days to two tablespoons.

4. Once your baby has mastered eating from the spoon and is doing well, introduce other cereals such as oatmeal or barley, but be sure to introduce one at a time, waiting at least 4 days before introducing a new one. Studies have shown that babies need to try a new food up to 10 times before they learn to like it.

5. Once your baby has mastered cereals, then you can introduce fruit and vegetable purees! The fun has just begun.

You can mix cereal with breast milk, formula, or water. Breast milk or formula are adds a nutritional boost to the meal and is highly recommended.

An important note: Rice cereal mixed with breast milk turns "soupy" after standing for a while because the enzymes in the breast milk break down the cereal. It's still safe to use.

Five Great Summer Rice Dishes

Rice is one of those fantastic foods which goes with just about anything and makes summertime meal preparation quick and easy. Who wants to spend hours in a hot kitchen when the sun is shining and there's laughter in the air?

Here are five great rice dishes to make summertime meals quick and delicious.

Rice

#1 Gallo Pinto
In Costa Rica rice is a staple, they even have it for breakfast. This tasty dish will help you start your day on the right foot.

Step One: Make one cup of white rice.

Step Two: You can make this ahead of time, the night before, and store it in your refrigerator. Sautee one small chopped onion in one tbsp of olive oil.

Step Three: Add one can of rinsed and drained black beans and one package of adobo sauce with cilantro and one tbsp of Lizano sauce. This is a salsa commonly found in Costa Rica. You can find it in your grocer or online.

Step Four: Refrigerate or set aside.

Step Five: Scramble two eggs in a nonstick pan. Add bean mixture and rice to egg mixture and serve.

#2 Chile-Cheese Burritos with Rice

Step One: Cook 1 cup of white rice.

Step Two: Sautee ½ cup shredded zucchini, ½ cup thinly sliced green onions, and 1 tbsp of canned chopped green chilies in a non-stick pan coated with cooking spray.

Step Three: Add rice to sautéed vegetables, cook for one minute, remove from heat and add 3 tbsp sour cream.

Step Four: Warm flour tortillas according to package directions. Place rice mixture in the center of the tortilla, top with 1 oz of Monterey jack cheese and roll up.

Step Five: Serve with chopped tomatoes, shredded lettuce and a dollop of salsa - enjoy!

#3 Fried Rice

This wonderfully easy recipe is great for leftover rice and makes a great quick and easy meal.

Step One: Heat 1 teaspoon of vegetable oil over medium high heat in large skillet or wok.

Step Two: Add one or two eggs to pan (depending on how eggy you like your fried rice) and 1 teaspoon of dark sesame oil. Stir fry for two minutes.

Step Three: Add three cups of cold rice and stir fry for three minutes.

Step Four: Add vegetables of choice to rice. Common ingredients include ½ cup peas, ¼ cup diced carrot, and ¼ cup chopped onion.

Step Five: Season with salt and pepper to taste and serve with soy sauce - enjoy!

#4 Summertime Rice Salad

Cold rice? You betcha! This great salad is best served cold and jam packed with healthy seasonal vegetables.

Step One: Cook two cups of white rice.

Step Two: Chop and combine 2 green onions, 2 to 3 cloves of garlic, crushed and finely minced, 1 small summer squash, 1 large tomato, 1/2 red bell pepper, 1 cup spinach leaves, rolled together tightly and very thinly sliced, 2 tablespoons finely chopped fresh parsley, 1 small carrot, grated or minced.

Step Three: In a small bowl combine: 1/4 cup fresh lemon juice and 1/4 cup extra virgin olive oil.

Step Four: Pour lemon juice and oil dressing over vegetables. Cover and refrigerate for 30-60 minutes.

Step Five: Add rice to vegetable mixture and refrigerate or serve immediately.

#5 Rice Pudding.

We've covered breakfast, lunch, dinner and a salad, it's time for dessert and what's better than rice pudding?

Step One: Cook ¾ cup of your favorite rice. Basmati makes the best pudding.

Step Two: Combine 6 egg yolks and ¼ cup sugar in a small bowl and beat until smooth.

Step Three: Add the rice to the egg mixture and place in a shallow baking dish or pie pan.

Step Four: Place dish containing egg and rice mixture in a larger dish and add boiling water until it reaches halfway up the side of the egg mixture dish.

Step Five: Bake in a 250 degree oven for about an hour. Insert a knife in the center of the pudding. If it is done the knife will come out clean.

Step Six: Refrigerate until thoroughly chilled.

Step Seven: Before serving sprinkle pudding with brown sugar and place under a pre-heated broiler for about one minute. Watch closely so it doesn't burn! Serve warm or cold.

Rice makes a fine foundation for a wide range of meals, while it can certainly be enjoyed year around the simplicity makes it a great base for many summertime meals.

How to Cook Perfect Rice Every Time!

The most common forms of rice are indica (long grain) and japonica (short grain). There are many other forms and varieties of rice, but for our purposes we will "stick" with the basics. Many a cook have become frustrated with sticky, lumpy rice that causes all sorts of panic and dread. Do not be afraid! Cooking rice is easy and can be done perfectly each and every time out. A few basic, simple rules always apply. Follow these rules, and you can become a world class rice cooker every day.

I travelled in the New Orleans area for many years and picked up a few tips from some great home chefs that I use each and every time when I make rice. First off, I was taught to put the rice in a heavy saucepan. Put enough water so that when you put your little finger in the pot, the water will come to the first joint of your little finger. Sprinkle some salt and a spoon or two of butter or margarine. Turn on the fire and when the rice begins to boil, lower the fire and cover the pot with a tight-fitting lid. Cook until all of the water is gone.

People always get tripped up by what amounts of rice to use. A rule of thumb is to use as much as you will need for that day. What? Very simply, it's a one to two ratio. One cup of rice (medium-grain, long-grain, or extra-long-grain) to two cups of water. Converted rice will sometimes tend to separate. These brands of rice do not separate. They do somehow stick together, but they are are not gluey or sticky. One teaspoon of butter, margarine, or vegetable oil will do the trick. Once the mixture begins to boil, reduce the heat to medium-low. Cover and cook for about 20 minutes or until the water is completely absorbed. Do not overheat or burn the rice. If you follow these simple instructions, you will be amazed at what you can accomplish.

Definite no-no products are those made with wheat, rye and barley, the popular gluten-bearing grains found in many breads, cereals, pastas, crackers and other baked goods. Gluten also lurks in other less obvious places such as luncheon meats, salad dressings, yogurt, malt vinegar, soy sauce, many flavorings, and gravy and sauces thickened with flour. People with celiac disease experience a severe immune reaction to gluten -- the protein in wheat, rye and barley that can inflame the lining of the small intestine and interfere with the body's ability to absorb nutrients and minerals. When you can't get the nutrients your body needs, health complications arise.

Rice-based flour is one food ingredient you can eat without fear, since it contains no gluten. But which flour is better for you - one made from brown rice or white rice? Is there a significant difference in nutritional value?

Brown rice flour explained

Made from finely ground whole-grain rice, this slightly tan-coloured flour has a nutty flavor and is higher in fiber and nutrients than white rice flour. This is good to know, since people with celiac disease often need to supplement their nutrient intake, especially with folate, iron and dietary fiber.

What is folate?

Folate (an important water-soluble B vitamin) is especially critical for fetus development, which is why pregnant women especially should have this nutrient during and after pregnancy. Adults should have at least 400 micrograms of folate daily and for women, at least 600 micrograms during pregnancy. One cup of brown rice flour contains 25 grams of folate versus 5 grams of folate in one cup of white rice flour.

White rice flour

As the name implies, white rice flour is made from ground white rice, and contains no bran or polish (the part of the layer under the rice bran) thus is lower than in fiber and nutrients than brown rice flour. White rice flour contains less folate than brown rice flour. (By way of note, glutinous rice flour is also known as sweet, sticky, or sushi rice flour. It's made from sticky short-grain rice that is higher in starch than brown or white rice. Like its brown and white cousins, glutinous rice flour doesn't contain gluten either.)

What about flour and fiber?

Although our bodies don't break down fiber, it plays an important role, particularly through our digestive system. Fiber helps us maintain regular bowel movements. Consuming adequate amounts of fiber is especially important for people with celiac disease, but especially those newly diagnosed individuals who may have symptoms of diarrhea caused by gluten damaging the small intestine. Comparison-wise, the dietary fiber of brown rice flour is more than double the amount found in white rice flour.

In summary:

While all rice products are good for people who are celiac or suffer from gluten-intolerances, foods and snacks made with brown rice flour are better than white rice flour.
