Dawn's Family Reunion Rice Salad

Summer is a great time for a salad like this. The ingredients in this salad are fresh and healthy. Usually, we think of salad as made from greens. Wild rice is not a rice but a grass and is also the state grain of Minnesota. Summer is also family get-together time - lots of outside days, reunions, days at the lake, or even just a simple picnic in a local park. This salad is the perfect dish to take along and share.

My friend, Dawn, in Knoxville, TN, was willing to share this recipe with me and I want to pass it along for others to enjoy. It is a requested dish served at her family's reunion each July. As with all great hand-me-down or share among friends recipes, there is some play in the quantities. I like that idea because you can start with a lesser amount of a seasoning and adjust to your tastes. Remember, you can always add, but it is not always easy to get too much of some ingredients out of a dish.

Salad Ingredients


3 cups brown rice, cooked
1-1/2 cups wild rice, cooked
Cook the rice the day before and store in a sealed container or bag. It is the same premise as making fried rice - chilled rice is what works! When you get ready to mix, blend the rice together. It will be sticky and that is exactly what you want.
½ cup golden raisins
¼ cup toasted sesame seeds
½ cup toasted slivered almonds
¾ cup chopped green olives

Dressing Ingredients


¼ cup rice wine vinegar
¼ cup Worcestershire Sauce
¼ cup Balsamic vinegar
¼ cup brown (apple cider) vinegar
1/4 cup Worcestershire sauce
1/3 cup olive oil or salad oil
2 teaspoons liquid smoke
1-2 teaspoons or 1-2 packets of sugar or sugar alternative (Splenda is usually what I use).
2-3 packets of dried soup mix Important note - all this is needed is 2 - 3-teaspoons of seasoning. The dried soup mix is not the package size that serves 3 -4 people. They are one serving size packages. Any brand or any flavor will work and this is important as not all brands are available nationally. Dawn uses Knorr or MBT beef broth flavor. In a pinch, you can use the packets of seasoning that come with the Ramen noodles. Remember though they are high is sodium if that is a diet consideration. You can also use dried soup base mix - just do 2-3 teaspoons, or adjust to your taste.
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley

Instructions:

In a large mixing bowl, combine all ingredients and blend thoroughly. That's it!
Pretty easy to do - quick and ready to go.

The quantities in this recipe will serve a large group. Try cutting the amounts in half for a smaller group. It is the perfect outdoor dish because you don't have the issues of food spoilage with mayonnaise based salads, however, you do have use common sense with any foods left not refrigerated for long periods of time.

Rice Diet

The name makes it sound like just another gimmick but this diet plan is anything but. The Rice Diet is a weight loss program that is run from Duke University in Durham, North Carolina. Participants in the plan have experienced great success.

The Rice Diet is a medically supervised plan. The diet can be followed for as little as two weeks depending on the needs of the participant. The program requires that the participants live in the facility for the duration of the program.

The diet was developed almost eighty years ago. The doctor that developed the diet wanted to see if certain diseases could be affected by what we eat. He was hoping to find that by changing the diet, the progression of conditions like diabetes could be reversed.

The diet emphasizes rice as the main staple of the plan. It was observed that people, who ate a diet of foods where rice was consumed on a regular basis, enjoyed a life with few instances of hypertension, stroke, or diabetes. This can be seen in Asian countries where rice is eaten at almost every meal.

The participants eat plenty of fruit, vegetables, fish and of course, rice. The food choices are quite specific which accounts for the quick loss of weight. Portion size is regulated so that patients learn how to eat and what is normal for serving sizes. Portion sizes have gotten so out of control in this country that everyone needs to be retrained to understand how much they should actually be eating.

Fat and salt consumption are kept low. Salt is not recommended in particular for patients with high blood pressure. This can be a problem for "salt-a-holics". But, using a lot of salt to season food leads to fluid retention and bloating. Patients are shown how to season food with spices other than salt. Fat is kept low so that the body will use it's own stores as fuel.

Patients have access to classes that teach all about food and how to eat properly for optimal health. Support is available for those who need help during their stay and how to manage after the program is over. Since the program is supervised, the health of the patient is watched for any major problems.

The program is costly. Staying in a program of this sort for any length of time will require big bucks. You may need to take out a personal loan if the program is what is needed in order to lose weight.

Participants do have access to support resources once they finish the program. This support ensures they continue to enjoy weight loss or weight maintenance at home. The program is also available online for people to check out what the plan offers and see if it is right for them.

Fragrant Clay Pot Chicken Rice

Fragrant clay pot chicken rice is usually cooked with vegetables, eggs, yam, tofu, capsicums and many other food. Whatever ingredients you use, the secret to getting a tasty dish is to fry the ingredients first before adding to the half cooked rice. Cooking in clay pot will make the dish more appetizing and enhance the aroma of the rice. Some people like the burnt rice at the bottom of the cooked clay pot rice. It has a unique flavour.

Ingredients:

1 cup rice

1.2 cup water

2 tbsp vegetable or peanut oil

1 tsp salt

1/2 tsp pepper

1 chicken drumstick

1 tsp light soy sauce

1 tsp dark soy sauce

1 tsp oyster sauce

sliced spring onions for garnishing

1 mushroom (soaked and sliced thinly)

1 small piece salted fish

1 Chinese sausage (sliced thinly)

1 small piece ginger (sliced thinly)

Method:

1. Chop the chicken drumstick into three pieces.

2. Marinate chicken drumstick with light and dark soy sauce, oyster sauce, oil, pepper and salt. Store it in fridge for at least an hour.

3. Heat up 1 tablespoons of oil and fry ginger, Chinese sausage, salted fish and mushrooms till fragrant.

4. Add 1 cup of water with 1.2 cup of rice into the clay pot and cook it in medium heat.

5. Once the water begins to boil, add marinated chicken to the rice. Reduce the heat to low and simmer with the lid on.

6. After 15-20 minutes, the rice should be ready.

7. Sprinkle some spring onions on top of the rice.

8. Serve it while it's hot.

Note: This recipe is for one serving only. If more serving is needed, increase the ingredients accordingly.

The Variety Of Red Yeast Rice Supplement Ingredients

A new study found that the ingredients of red yeast rice supplements vary in terms of amount. These ingredients are out in the market, and were introduced to lower cholesterol levels. Twelve of red yeast supplement products were subjected for the study, and the 4 of these had citrinin in detectable levels- potentially toxic and enough to damage the kidneys. This said ingredient is produced by a certain fungus.
In the year 2008 alone, Americans have already spent about $20 million dollars on red yeast rice supplements, hoping to give them hope to lower down the levels of bad cholesterol.
"Several studies have shown that specific formulations of red yeast rice reduce low-density lipoprotein [LDL or 'bad'] cholesterol significantly compared with placebo. This is likely related to the effects of monacolin K and the 13 other monacolins in the supplement, which also works to lower the production of cholesterol in the liver," according to the study lead by Dr. Ram Y. Gordon from Abington Memorial Hospital in Abington, Pa and Chestnut Hill Hospital.
Another ingredient available in red yeast rice supplements is the monacolin K. This ingredient is also a component of the drug Lovastatin (Mevacor)s, which is also responsible to cut the cholesterol level down. However, manufacturers normally do not reveal the levels of monacolin K or other monacolins in either red yeast rice supplements or on other medications to avoid being considered an unapproved drug.
In the study conducted for the red yeast rice, monacolin levels ranged from 0.31 mg. to 11.15 mg. per capsule. Meanwhile, the level of monacolin K in Lovastatin only ranges from 0.10 milligrams to 10 milligrams per capsule- which shows that the monacolin concentration in the red yeast rice is relatively higher. Researchers even added,
"Red yeast rice has been used for centuries for its medicinal properties and is an increasingly popular alternative lipid-lowering therapy that may benefit patients with a history of coronary disease who cannot take statins, subjects who refuse statins or who prefer a 'natural' approach to pharmacotherapy, or patients with a history of statin-associated myalgias [muscle pains]."
However, the researchers found a dramatic variability in red yeast rice products (in terms of monacolin levels), and also presence of citrinin, which raised their concern of having product standardization and labeling of the red yeast rice products. Until these concerns are addressed by the manufacturing companies, the researchers recommended that physicians should think several times before finally recommending red yeast rice to patients wanting to treat hyperlipidemia (otherwise known as high cholesterol), and prevent other forms of cardiovascular diseases.

3 potatoes, finely chopped


1 cauliflower, also finely chopped


1 1/2 of cups green peas


3 tomatoes, also finely chopped


3/4 tsp of turmeric powder

1 tsp of curry


1 cup of water





PREPARATION:


The preparation of the Indian vegetable curry recipe is fairly easy. What you need to do is to place all ingredients in a crock pot or slow cooker. Cook on low temperature for 5 to 6 hours. When the food is evenly cooked serve hot. You can even garnish it with finely chopped salad.

Nfl Playoffs 2008 Week 2

There are 4 games slated this week for the 2008 NFL playoffs. As I see it 3 of the home teams will win along with 1 underdog.

Dallas Cowboys - New York Giants. I consider myself somewhat of a homer. I grew up in Louisiana and I was a New Orleans Saints / Archie Manning fan from child hood. I like both of Archies' son and always root for them to do well. Eli played his college ball in Mississippi where I now reside so I followed his college career pretty closely.

I think that the Giants moral victory against the Patriots in week 17 did a lot more for their confidence than most people realize. Eli finally got one monkey off his back last week with his first playoff victory. A little known fact is that Michael Spurlock, a kick returner on the other team is the guy who succeeded Eli at quarterback for Ole Miss.

I think the momentum that the Giants now have along with the Tony Roma - Jessica Simpson curse will propel the Giants to victory in the first ever playoff meeting between these two teams.

In keeping with the Manning theme, I expect the Colts to take care of the Chargers with not much problem. The Chargers handed the Colts one of the two loses this season that really mattered. Peyton Manning had a terrible day with 6 interceptions. No way that happenes again!! After a slow start, Norv Turner has actually taken the Chargers further than Marty did last year, but I expect that run to end this week.

The Jaguars squeezed by the team with my namesake as a kicker last week (Pittsburgh Steelers / Jeff Reed). The Jaguars have played well all seaon long, but with the undefeated Patriots and record setting quarterback, Tom Brady along with record setting receiver Randy Moss, I just don't see much hope for the Jaguars. Moss broke Jerry Rice's single season touchdown record this season. Again, I am a homer and saw Jerry Rice play at least 5 times in his senior season in college. I was rooting for the record to stand, but to no avail. I was also hoping that Tom would not break Peyton's touchdown record that he had just obtained a couple of seasons ago, but again to no avail. They same touchdown pass broke both records. I wonder who kept the ball.

The last game of the weekend will be played between the Green Bay Packers and the Seattle Seahawks. Mike Holgreen takes his team to Green Bay to play aginst the team that he won a Super Bowl with. Again, I am being a homer and rooting for the Mississippi connection of Brett Favre to Donald Driver. I just don't see Seattle having the fire power to take down the Packers.
