Spanish Chicken and Rice Recipe

You will need:

All purpose flour (2 tablespoons)
Salt (1 teaspoon, divided)
Pepper (1/4 teaspoon)
Chicken breast (2 halves with bone)
Butter or margarine (1 tablespoon)
Onion (1/2 cup, chopped)
Green pepper (1/4 cup)
Garlic (1 clove, minced)
Pimento (1 jar or 2.5 ounce, drained)
Uncooked Rice (1/2 cup)
Chicken broth (1 ¼ cups)
Turmeric (1/2 teaspoon)
Chili powder (1/8 teaspoon)

How to do it:

First take a large resalable plastic bag and combine here the flour and ½ teaspoon of salt and pepper, in here add the chicken and shake until it is well coated. Now that you have the chicken prepared take a large skillet and a brown chicken in butter over medium heat, remove the chicken from fire and set aside, but keep it warm. Now take the pan drippings and sauté onion, green pepper and garlic until tender. In here add the pimento and the rice, now reduce the heat but keep cooking for another two minutes and remember to stir constantly. Now add the broth turmeric and chili powder, you can stir the remaining salt too and keep everything cooking until it reaches a boiling point. Finally before you finish pour into an ungreased baking dish and top it with the chicken. Bake this during 45 minutes at 350º degreed or until the juices from the chicken are almost gone and the rice is tender.
