Fried Rice Recipes With Dried Shrimp

Ingredients for the Fried Rice recipes with Dried Shrimp:

3 tablespoons oil
1 egg, beaten with 2 teaspoons water
2 cloves garlic, chopped
3 spring onions, chopped 1/2 cup (60 g/2 oz.) dried shrimp, roughly chopped
4 cups (750 g/1 1/2lb)
cold cooked rice (see HINT)
1 tablespoon fish sauce
2 teaspoons Golden Mountain sauce
1 cup (30 g/1 oz.) coriander leaves
1/4 pineapple, cut into pieces
1 cucumber, chopped chilli sauce for serving

Directions for the Fried Rice recipes with Dried Shrimp:

1. When you want to cook the Fried Rice recipes with Dried Shrimp you should start by heat 1 tablespoon of oil in a wok. Pour in the beaten egg and swirl the wok until the egg sets. Cut into quarters, flip each quarter and cook the other side. Remove the egg from the wok and cut it into thin strips.

2. Add the remaining oil and stir-fry the garlic, spring onions and shrimp for 2 minutes. Add the rice and stir-fry for 5 minutes over high heat until the rice is heated through.

3. Add the sauces, coriander and omelette strips to the wok and toss well. Arrange the rice on a serving platter. Mix together the pineapple and cucumber and serve as an accompaniment to the rice, with a little chilli sauce on the side.
