Stir Fried Vegetable Rice With Roasted Spicy Salmon
Ingredients:
Rice
1 chunky salmon fillet
½ cube of fish stock
½ red onion
Jerk seasoning powder
3 cloves of garlic, thinly sliced
2 teacups of rice
½ teacup of peas
½ teacup of sweet corn
1 carrot, thinly sliced
2 vegetable stock cubes
1 inch ginger, cut into thin slices
1 chilli, thinly sliced
1 handful chopped parsley
Salmon:
- Crumble fish stock into bowl
- Add 1 thinly sliced garlic clove and chopped chili
- Add ½ tablespoon of jerk seasoning
- Add black pepper
- Add 3-4 tablespoons of olive oil
- Mix until it forms a paste, and coat the salmon with the paste
- Place salmon in a medium grill ; minimum 7 minutes each side, until cooked (pink) and crispy on top
Rice:
- Follow cooking instructions on packet
- When cooked, heat 4 tablespoons of olive oil in a wok
- Place carrots in boiling water for 5 minutes, remove and place to a side
- Add 2 thinly sliced cloves of garlic and the ginger into wok
- Add half onion, thinly sliced, into wok.
- Stir all until brown; add rice and stir
- Crumble vegetable stock over rice and stir
- Add peas, sweetcorn and carrot. Stir
- Black pepper to taste.
To serve:
- Place rice into a bowl; compress, and place upside down on plate. Place salmon next to it. Sprinkle everything with parsley to garnish, and enjoy!
Stir Fried Jerk Brown Rice
Serves 2
Ingredients:
3 teacups brown rice (Italian/American)
Jerk seasoning powder
2-3 handfuls dried fruit mix
1 red onion
3 cubes vegetable stock (to crumble)
1 cube vegetable stock (to dissolve)
3 cloves garlic
Fresh parsley
½ of each: red, green and yellow peppers
To cook rice:
- Heat water to boiling
- Dissolve stock cube in water
- Cook as instructed on packet
To stir fry:
- 3 tablespoons of heated oil into a wok
- Chop up garlic and red onions into small slices, and add to wok
- Cook until brown (1-2 minutes)
- Add brown rice and stir
- Crumble 2 stock cubes on top and stir
- Add ½ tablespoon jerk seasoning and stir
- Add mixed fruit and stir
- Add parsley
- Cut peppers into thin strips, and add to mix
- Voila!
