Chicken Wild Rice Soup Recipe

Chicken Wild Rice Soup is a popular Christmas Eve dish in America where (in some parts) wild rice grows in abundance. This wholesome meal is ideal for a winter dinner with your family and friends. Ingredients

Rice

Chicken broth - 2 quarts

Fresh chopped mushrooms - 1/2 pound

Thinly chopped celery - 1 cup

Shredded carrots - 1 cup

Thinly chopped onion - 1/2 cup

Chicken bouillon granules - 1 teaspoon

Dried parsley flakes - 1 teaspoon

Garlic powder - 1/4 teaspoon

Dried thyme - 1/4 teaspoon

Margarine or butter - 1/4 cup

All-purpose flour - 1/4 cup

Condensed cream of mushroom soup (undiluted) - 1 (10.75 ounce) can

Additional chicken broth or dry white wine - 1/2 cup

Cooked wild rice - 3 cups

Cooked and cubed chicken - 2 cups

Directions

Take a big saucepan and mix ingredients such as chicken broth, fresh chopped mushrooms, thinly chopped celery, shredded carrots, thinly chopped onion, chicken bouillon granules, dried parsley flakes, garlic powder, and dried thyme. Let it boil for a while. Decrease heat; Put a cover and let it simmer for around half an hour.

Melt some butter in a Dutch oven or in a soup kettle. Mix in flour until the mixture becomes smooth. Slowly whip in broth mixture. Let it boil; cook the mixture and stir it for about 2 minutes until the mixture thickened. Mix in wine and soup or broth. Add some rice and chicken; heat the mixture thoroughly.

You can add many other vegetables of your choice to make it a hearty and flavorful soup.
