Here is a Shrimp and Spinach Risotto recipe that is easy and tasty.  You can also serve it to the diabetics among your family or friends eliminating the need to make something especially for them.  Cooked in healthy reduced sodium chicken broth, this risotto is full of good-for-you ingredients such as fresh mushrooms, baby spinach, arborio rice, shrimp, etc.  This skillet meal is table ready in less than 30 minutes making it a good choice for busy days.  While the risotto cooks, brown some rolls and slice some garden fresh tomatoes, when possible, and you have a great meal in no time.
